Step-by-step preparation

  1. Roast the peppers: Place them on a baking tray with a little oil and salt. Bake them at 180°C for 35 minutes, turning them over halfway through. Then peel and dice them.
  2. To prepare the tomato base: sauté the chopped onions in a drizzle of oil. Add the chopped garlic and, when the onion is golden, stir in 8 crushed tomatoes. Cook over low heat for 15 minutes. Add the roasted peppers, season with salt and pepper, and add thyme.
  3. To assemble the Ratatouille: slice the eggplants, zucchini, and the remaining 2 tomatoes. Cover the bottom of a baking dish with the sauce and arrange the slices, alternating the colors.
  4. Bake: Season with salt and pepper, add garlic powder, basil, and a drizzle of olive oil. Cover with aluminum foil and bake at 150°C for 30 minutes. Remove the foil and bake for another 15 minutes.
  5. Serving: Serve with the sauce and let the colors of the dish show through.
